These energy-packed power balls are one of my favorite cures for feeling sluggish during a long work day. The hot weather has been pretty draining where I live, and  has often left me feelingblah. Enter: chocolate + mint + loads of nutritious energy foods for a healthy pick me up!

Medjool dates are the king of dates. They are high in natural sugars and potassium providing the body with hours of natural energy, while also helping build muscle tone to supplement physical activity. Sounds like the perfect base for a power ball. Mixed in with nuts, a little coconut, cacao and mint these power balls taste very reminiscent of thin mint cookies.

Medjool dates are very easy to pit. Just slice open the center and discard the hard seed. The only slightly difficult part about de-pitting these dates is that they are very sticky. They kept sticking to my knife, so I oiled my knife a little bit with coconut oil and it helped a lot. After de-pitting the dates just throw all of your ingredients in a blender and pulse until a smooth mixture is formed.

I used my NutriBullet to blend this mix,  and it handled it like a champ as long as I split the recipe into a couple sections to make it all fit. A good food processor would be perfect for the job though.

Mint Chocolate Power Balls | glutenfreeifyouplease.comThe best part of this recipe is getting to roll your dough into small balls. While rolling the power balls into shredded coconut I was reminded of playing Katamari Damacy.

In Katamari Damacy, you play as a prince on a mission to rebuild the stars after his father accidentally destroys everything. To restore the universe you have to roll a magical ball called a katamari, collecting objects ranging from thumbtacks, feathers, to people, and mountains until the ball has become large enough to become a star. Have you ever played? Its a very delightful game. It has fun music too. :-)

After rolling out the power balls, refrigerate them for at least a half an hour for them to firm up. I put mine in the freezer overnight, so they would be super cold for my lunch the next day. Pretty quick and easy!  Enjoy!

Chocolate Mint Power Balls

  • 1 cup almonds
  • 1 cup walnuts
  • 1 cup shredded coconut
  • 5 mint leaves (more mint depending on your preference)
  • 2 cups medjool dates, pitted
  • 2 tablespoons coconut oil
  • 2 tablespoons chia seeds
  • 2 tablespoons cacao
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla
  1. Slice dates in half and remove pit.
  2. Add all ingredients into blender and puree until smooth.
  3. Take a tablespoon of the raw dough and roll into 1½ inch balls.
  4. Roll balls in extra shredded coconut.
  5. Refrigerate for at least 30 minutes for the power balls to firm up.

      Hi Sarah!
      I do not normally calculate nutritional values for these recipes. However, if you put this recipe into they can calculate the nutritional facts. Based on 20 mint balls and the given ingredients this site calculated the Nutritional Facts as: Calories 131.3, Total Fat 8.7g, Carbs 14.g, Protein 2.5g, for each mint ball. This is just an estimate.
