In the summertime, my family and I would take a trip to the local swimming hole for the day. The swimming hole was a big deal for me as a kid. Why? The swimming hole had “The Rock.” “The Rock” was an aptly-named large chunk of cement that had broken away from an old bridge and landed permanently stuck in the middle of the river. The river current was swift, but if you timed it right you could swim out in such a way that you could land on this rock. If you could land on “The Rock”, you were a king.  Simple as that.  It had to be done.

It took me years to swim out to that rock. I was 10 when I finally did it.  I remember being so excited that I had finally achieved my greatest success, that I jumped in the air for my dad to see so that he too could revel in my glory!  I was almost immediately caught by the current, and swept downriver. It didn’t matter though, because I had landed “The Rock!”  It was a proud moment for me.

After countless more attempts at catching the rock that day and in the following years ( including many victories, and many more failures), I would swim ashore and barbecue with my family. Burgers were my all time swimming hole favorite. My dad mixed in just the right amount of spice to make the burgers really zing! In the spirit of my swimming hole barbecue favorite, I created a spicy burger with great roasted red pepper flavor.  The burger is topped off with my favorite homemade gluten free hamburger bun.

This recipe is all about the peppers. The taste of jalapeño and red pepper really comes alive when you roast them both in the oven. Cut open your jalapeño and discard the seeds and membrane. Do the same with the red pepper. Place them on a broil pan on the top rack of your oven and broil for about 2 minutes on each side. You will start to hear them pop, sizzle, and start to smell really spicy! It may char a little in places, but thats alright. It adds to the flavor :-)

Once your peppers cool, dice them up with the garlic, cilantro, and green onions.  Crack an egg, add it to your turkey, and throw in all the spices and vegetables. Mix the turkey really well with all of the ingredients!  Divide the mixture into 5 equal mounds and form into patties.  Broil in the oven for 3-4 minutes on each side, or until the internal temperature of the burger reaches 160F. Top with cheese on the last minute of cooking, and pile on homemade gluten free hamburger buns!

Ingredients
  • Gluten Free Roasted Pepper Turkey Burger
  • 8 slices turkey bacon
  • 1⅓ pounds ground turkey
  • 2 cloves garlic, finely chopped
  • 4 green onions
  • 1 tablespoon thyme
  • 2 tablespoons cilantro
  • ½ red bell pepper, roasted
  • 1 jalapeño, roasted
  • 2 teaspoons cumin
  • 1 teaspoon cayenne
  • 1 egg
  • 5 slices pepper jack cheese
  • 5 Gluten Free hamburger buns

  • Gluten Free Hamburger Buns
  • 1 cup almond milk , heated to 110F.
  • 2¼ teaspoons active dry yeast
  • 3 tablespoons avocado oil (or olive oil)
  • 2 eggs, room temperature
  • 2 cups Gluten Free All Purpose Flour (recipe below)
  • 1 teaspoon xanthan gum
  • ½ teaspoon salt
  • 1 teaspoon unflavored gelatin (or agar agar powder)
  • 2 tablespoons honey
  • 1 tablespoon sesame seeds (optional)

  • GF All Purpose Flour
  • 80g brown rice flour
  • 80g white rice flour
  • 70g sweet rice flour
  • 50g tapioca starch
Instructions
  1. Gluten Free Roasted Pepper Turkey Burger
  2. Cook bacon in a skillet over medium heat until crisp. Set aside.
  3. Slice open jalapeño and discard seeds and membrane. Slice open red pepper and do the same.
  4. Turn oven to broil. Place peppers on a broil pan and broil in oven for 2 minutes on each side. You want the peppers roasted but not charred.
  5. Dice green onions and roasted peppers (when cool)
  6. Combine turkey, egg, diced garlic, green onions, peppers, thyme, cilantro, cumin, and cayenne.
  7. Mix well and form into 5 equal patties.
  8. Cook on broiler pan for 3 - 4 minutes on each side. Or until internal temperature of the burger is 160F. Do not overcook.
  9. Place cheese on burgers the last minute of cooking.
  10. Top with bacon and serve with Gluten Free Hamburger Rolls.

  11. Gluten Free Hamburger Buns
  12. Warm milk to 110F by placing in microwave for at 30 seconds (depends on power of microwave)
  13. Proof yeast by adding it to warmed almond milk. Add honey to yeast mixture and stir well.
  14. In a small bowl combine eggs and oil. Whisk well.
  15. In a large bowl mix all remaining dry ingredients together. Add egg mixture and yeast mixture. Mix until blended. Dough will be sticky.
  16. Cover and place in a warm area for 1 hour to rise.
  17. Pre-heat oven to 375F.
  18. Line a flat pan with parchment paper.
  19. With wet hands separate the dough into 5 equal portions.
  20. Plop dough onto parchment paper, and work into a bun shape. You may have to re-wet your hands several times as the dough is very sticky.
  21. Sprinkle with sesame seeds.
  22. Bake for 15-20 minutes or until golden brown. Remove and place on a rack to cool.
