It has been a pretty fruit filled week. We visited our favorite produce market and found the mother-load of peaches. Their was an over-ripe box of locally peaches grown in nearby Yakima, Washington sitting in the corner of the store on discount.  20 pounds for only $10.00! Score!

We spent close to an hour washing, cutting, and freezing the peaches, and then filling four half gallon freezer bags. Needless to say we will not be running out of peaches anytime soon.

Over-ripe fruit finds are perfect for the freezer. Right now, you will find in our freezer an assortment of bananas, honeydew, peaches, blackberries and strawberries. plus whatever else I can wrench in amongst the fruit.  Oh, how I would love a chest freezer one day!  Pick three of these fruits, blend them together and in 3 minutes you have a perfectly sweet smoothie.

Frozen bananas are my favorite frozen fruit to keep on hand.  Not only do they go with almost anything, but they add a creaminess and an extra sweetness as well. Pair that with peaches, honeydew and mint and you have s very refreshing smoothie.

Ingredients
  • 5 mint leaves
  • 1 cup frozen honeydew melon
  • 1 cup frozen sliced peaches
  • 1 frozen banana
  • 1 teaspoon lemon juice
Instructions
  1. In a blender or Nutribullet add mint leaves, frozen peaches, frozen banana, frozen honeydew and lemon juice. Blend for 15 – 20 seconds until ingredients are smooth.

    Fyi in a NutraBullet you have to add liquidI added almond milk yummy breakfastIll have my Vega One and chia seeds later 😉

      I do love almond milk in smoothies and love to use it often. :-) For this recipe though, I didnt find that I needed to use almond milk with the Nutribullet, I just had to shake the canister a few times to get it to blend. Glad you enjoyed the recipe!
