Im in love with fruit. So much so that it borderlines on somewhat of an obsession. Â Whats not to love about fruit? Its naturally sweet, amazingly healthy, and plum full of thirst quenching juices. Â And the colors! Â The vibrant colors found in fruit often inspire me and fill me with wonder.
To me, eating fruit is like followingÂ the happiness diet. Â I was pretty happy after I made this smoothie. Â The happiness started as soon as I went out to pick the mint leaves from my garden. Â The vibrant green and theÂ refreshing smell made me do a little half skip back to the kitchen to concoct my smoothie. Â The happiness continued while I was slicing up the strawberries.
You know a perfect strawberry when you see it/smell it. Â It has that deep red hue through and through, and smells so sweet almost like caramel simmering on the stove. Â Of course, the first couple strawberries had to be taste tested before being placed in the blender. Im actually surprised any made it in at all. Â Then came the watermelon. Â So juicyÂ and tender, it is one of the bestÂ summer fruits! Â Happiness continued as I sliced the watermelon in half toÂ freeze a portion for the smoothie, and proceeded to taste test a good portion of the rest.
The watermelon takes about two hours or so to completely freeze through enough to arrive at the desired consistency. Â If youre using for smoothies, I definitely recommend pre-freezing! Â I scooped two cups of frozen watermelon into my blender along with the de-stemmed strawberries, the mint, a touch of honey and a couple tablespoons of water. Â After blending for about 20 30 seconds, the incredibly smooth puree of fruit was finally finished. Â I filled my glass to the brim, garnished with a mint leaf, and twirled. Â Happiness in a glass!
- 2 cups semi-frozen watermelon
- 12 strawberries
- 8 mint leaves
- 1 teaspoon honey
- 2 tablespoons water (optional)
- Cut the watermelon into bite sized cubes and freeze for 2-3 hours.
- De-stem the strawberries and cut in half.
- Add the watermelon, strawberries, mint, and honey into blender.
- Blend for 20-30 seconds or until smooth and frothy
- Pour into a glass and enjoy!
